Nothing costs more than time. We can take a few years off the back end of the aging process.
Finish. Balance. Promote consistency. Abbreviate and enhance the aging process and enable younger spirits taste older without compromising quality.
Evaporative Extraction technology produces a perfect copy of oak barrel aromatics that does not require time in a barrel.
Evaporative Extraction produces intensely-aromatic aroma profiles that are perfect copies of the original barrel source. Aromatic profiles that would normally take months or years to realize can be integrated into spirits in minutes.
PROBLEM 1:
Angels are greedy. Evaporation loss from barrels “the Angels’ Share” can be 5% to 10 % loss per year.
Evaporation loss from barrel aging can average up to $300.00 of lost product - per year - per barrel.
These barrels also must be stored and regularly monitored to ensure spirits are not over oaked, resulting in lost production space and ongoing labor costs.
SOLUTION 1:
With a perfect copy of barrel aromatics, time is not required
Evaporative Extraction produces intensely-aromatic aroma profiles that are perfect copies of the original barrel source.
Aromatic profiles that would normally take months or years to realize in a barrel can be integrated into spirits in minutes. We don’t eliminate aging entirely, but we certainly can take a few years off the back end.
PROBLEM 2:
Oak aging is unpredictable and never consistent. Barrels must be blended to make a consistent product.
Oak aging is affected by the weather, the position of barrels in the rickhouse, and a number of other factors.
The only way to traditionally control the oak rate of a spirit is to continuously taste and monitor the spirits, and then carefully blend different barrels to get a consistent product.
SOLUTION 2:
We do the work for you. Our products can be accurately titrated into spirits to achieve consistent results.
We do the work for you and provide precise oak barrel aromatic profiles from both French and American oak barrels at several toast and char levels.
Instead of blending barrels, we enable a spirit to be consistently finished to have the right levels of all key aromatics.
PROBLEM 3:
Conventional oak extracts are not a substitute for barrel or oak aging
No other extraction technology has been able to capture the true essence of oak in a way that replicates barrel aromatics imparted by time. Current oak extracts lack the vibrant aromatic profiles that make a great oak-aged spirit.
Even the best currently available oak extracts either (1) taste artificial or (2) have almost no aroma.
SOLUTION 3:
Evaporated barrel aromatics impart authentic aromatic profiles.
Our barrel aromatics are directly evaporated and captured from former French oak wine barrels and American oak spirits barrels using our exclusive, internationally patented Evaporative Extraction process.
We provide the most accurate oak profile ever produced in a convenient liquid format.
Bench Testing
HOW TO TEST IN SPIRITS
A simple starting point evaluation guide
The addition of barrel aromatics to spirits can do everything from increasing complexity, finishing spirits, enhancing and abbreviating aging time, and promoting consistency. As an initial starting point, we recommend pouring a few 2-ounce glasses of the same spirit type and comparing different dose levels of aromatics to an undosed sample.
(See dose chart at bottom of page.)
Whiskey
Primary Uses
Finish. Increase complexity. Promote consistency. Enhance and abbreviate aging time.
Recommended Barrel Aromatics
American Oak Aromatics; Medium and Dark Toast
French Oak Aromatics; Medium and Dark Toast
Recommended Dose:
1,500 to 8,000 parts per million. For quick bench testing, add sample aromatics to a clean glass and then immediately pour 2.0 ounces of whiskey. Swirl the glass for 30 seconds to mix.
Rum
Primary Uses
Finish. Increase complexity. Promote consistency. Enhance and abbreviate aging time.
Recommended Barrel Aromatics
American Oak Aromatics; Medium and Dark Toast
French Oak Aromatics; Light, Medium, and Dark Toast
Recommended Dose:
1,500 to 8,000 parts per million. For quick bench testing, add sample aromatics to a clean glass and then immediately pour 2.0 ounces of rum. Swirl the glass for 30 seconds to mix.
Tequila
Primary Uses
Balance and smooth out harsh flavors. Increase complexity. Promote consistency. Enhance and abbreviate aging time.
Recommended Barrel Aromatics
American Oak Aromatics; Medium and Dark Toast
French Oak Aromatics; Light, Medium, and Dark Toast
Recommended Dose:
1,500 to 8,000 parts per million. For quick bench testing, add sample aromatics to a clean glass and then immediately pour 2.0 ounces of Tequila or Mescal. Swirl the glass for 30 seconds to mix.
Brandy
Primary Uses
Finish. Balance. Increase complexity. Enhance and abbreviate aging time.
Recommended Barrel Aromatics
French Oak Aromatics; Light, Medium, and Dark Toast
American Oak Aromatics; Medium and Dark Toast
Recommended Dose:
1,500 to 8,000 parts per million. For quick bench testing, add sample aromatics to a clean glass and then immediately pour 2.0 ounces of brandy. Swirl the glass for 30 seconds to mix.
Dose Chart for 2-Ounce Serving:
IMPORTANT NOTE: Please do not allow evaporated aromatics to sit in an empty glass for more than a few seconds before adding spirits. The aromatics will evaporate into the air and dissipate if not added to another liquid. Add the recommended dose of aromatics to the glass and fill immediately. Swirl in glass for 30 seconds to promote good mixing.
